Ingredients:

2 racks of pork baby back ribs (approximately 4 pounds)
1/4 cup brown sugar
2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chilli powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper (adjust to taste)
1 cup of your favourite BBQ sauce
Instructions:

Prep the Ribs:

Remove the membrane from the back of the ribs to ensure tenderness.


Pat the ribs dry with paper towels, allowing the rub to adhere better.


Create the Rub:

In a bowl, combine brown sugar, paprika, black pepper, salt, chilli powder, garlic powder, onion powder, and cayenne pepper.


Mix well to create a flavorful rub.


Apply the Rub:

Generously coat both sides of the ribs with the rub, pressing it onto the meat for better adherence.


Let the ribs sit at room temperature for about 30 minutes to allow the flavours to penetrate.


Preheat the Grill:

Preheat your grill to 225°F (107°C) using the indirect cooking method. Place a drip pan in the centre under the grates.


Slow and Low Cooking:

Place the ribs bone-side down on the grill grates, away from the direct heat.


Close the lid and let the ribs cook low and slow for about 4 to 5 hours. This slow cooking process ensures tender meat.


Maintain the Temperature:

Monitor the grill's temperature and make adjustments to keep it around 225°F (107°C). Use soaked wood chips for a smoky flavour.


The Wrap (Optional):

After around 3 hours, you can choose to wrap the ribs in aluminium foil with a bit of apple juice or apple cider vinegar. This helps tenderise the meat further.


Glaze with BBQ Sauce:

In the last 30 minutes of cooking, carefully unwrap the ribs and brush a layer of your favourite BBQ sauce on both sides.


Allow the sauce to caramelise by cooking the ribs uncovered.


Check for Doneness:

The ribs are done when the meat has pulled back from the bones, and a toothpick easily goes through the meat between the bones.


Rest and Serve:

Once done, remove the ribs from the grill and let them rest for about 10 minutes. This allows the juices to redistribute.


Slice the ribs between the bones and serve them with extra BBQ sauce on the side.
